What it's about
Jessie Inchauspé argues that blood glucose spikes, not calories or weight alone, are the hidden driver of fatigue, cravings, aging skin, hormonal chaos, and long-term disease risk. Drawing on continuous glucose monitor data (including her own), she proposes that how and in what order you eat matters as much as what you eat. The book mattered because it translated a clinical metric into ten practical 'hacks' that let ordinary readers self-experiment without giving up foods they love.

Who it's for
- Someone who feels an energy crash every afternoon and assumes it's just normal tiredness - A person managing prediabetes or PCOS who wants food tweaks rather than another restrictive diet - A reader skeptical of fad diets who wants a mechanism-based reason to change eating habits
What’s inside
- 1The Glucose Lens1 min
Blood glucose spikes, more than total calories or willpower failures, are the common thread behind fatigue, cravings, skin aging, and disease risk, so tracking glucose response reveals more than tracking calories does.
- 2Why Spikes Happen1 min
Refined starches and sugars eaten alone or first in a meal cause the sharpest, fastest glucose spikes because they lack the fiber and structure that slow digestion.
- 3Savory Breakfast First1 min
Starting the day with a glucose spike, as a typical sweet breakfast does, sets a pattern of instability that makes cravings and energy crashes more likely for the rest of the day.
- 4Order Matters: Vegetables First1 min
Eating food components in a specific sequence — vegetables and protein before starches and sugar — can flatten the glucose curve of an identical meal by as much as 75 percent.
- 5Dress Your Carbs: Fat, Protein, and Fiber as Buffers1 min
Adding fat, protein, or fiber to a carbohydrate-heavy food, rather than eating it plain, blunts its glucose impact even when the amount of sugar or starch stays the same.
- 6Movement as a Glucose Tool1 min
Light movement after eating, especially a short walk, lowers glucose spikes by pulling glucose into muscles without needing insulin, making it a more immediate tool than most people realize.
- 7Vinegar and the Savory Snack Swap1 min
A small amount of vinegar before a meal, and choosing savory over sweet for snacking, are low-effort interventions that measurably reduce glucose spikes across a day.
About Jessie Inchauspé
Jessie Inchauspé is a French biochemist trained at Georgetown University and King's College London, where she studied genetics before working in data science at a French biotech startup. She began wearing a continuous glucose monitor on herself, amassed a large following (as 'Glucose Goddess') sharing her findings on social media, and turned that research into this 2022 bestseller.
